课程概述
This course is adjusted to suit a self-paced learning style. About the course, Lanna cuisine course includes the following contents: (1) influential factors on and characteristics of Lanna cuisine; (2) the old and current ways to cook each dish; (3) characteristics of Lanna cuisine categorized by cooking methods (à la carte; curries (Kaeng) and soups (Chor); stir-fried, steamed food; spicy salad; chili pastes; roasted, grilled, and fried food; and desserts); (4) seasonings and related culinary terms. Due to a wide variety of Lanna food, this course teaches some selected popular dishes of which ingredients and seasonings are easy to find. The cooking methods demonstrated in this course are aimed at maintaining their original tastes and nutritional values in the food. For example, meat will be added into some recipes for more protein, and shrimp paste or sea salt will be added for iodine.

【University Introduction】

Chiang Mai University (CMU) is a public comprehensive university located in Thailand, established in 1964. It consists of three campuses, covering a total area of approximately 14 square kilometers, with a student population exceeding 30,000. The main campus is situated at the foot of Doi Suthep in the western suburbs of Chiang Mai City, Thailand.

As one of the oldest universities in Thailand, Chiang Mai University boasts rich teaching resources and facilities. The air-conditioned central library is the most modern library in Northern Thailand, housing over 700,000 volumes, more than 700 Thai journals, over 350 foreign language journals, and a large collection of audiovisual materials. Each faculty has its own independent library connected to the central library network. Every faculty is also equipped with a computer network linked to the university's central network, allowing students to access the computer network in the university's computer center and student dormitories.
